Zoodles aka Zucchini Noodles are easy, versatile, and overall DELICIOUS! I HIGHLY recommend purchasing your own spiralizer over buying pre-spiralized veggies – so much more cost effective. I LOVE my Paderno World Cuisine Standing Spiralizer, but here are some more options!
One of my self-care non-negotiables is making sure I have time to cook my meals. It’s become therapeutic, a break outside the usual chaos, and I enjoy knowing exactly what is going into my body. I usually plan the meals loosely ahead of time, then make them come to life in the kitchen.
See below for some of my tried & true Zoodle combos.
COOKING TIP: No one likes a soggy zoodle. There are a few ways to prevent this:
- Don’t cook them at all
- Toss them in a pan along with the “sauce/topping” for a minute AT MOST. The quick burst of heat cooks them just enough to be warm, but keep some form and shape.
- Spiralize ahead of time, wrap them in a paper towel and leave them in the fridge for the day
